Pepper and Pear Stuffed Pork Chops

Ingredients
4 1-inch thick pork chops
4 - 8 oz. MM Local hot or mild High Desert Chillis
1 pear, peeled and diced
1 shallot diced
1 tablespoon melted butter
¼ cup bread crumbs
2 tablespoons water (or more as needed)
1 ounce raisins
1 teaspoon tarragon
1 teaspoon dried cilantro
1 teaspoon dried parsley
Salt and pepper to taste

Cooking Directions
  1. Preheat oven to 375 degrees.
  2. Season pork chops with salt and pepper as desired.
  3. Slice small pockets into the sides of the pork chops.
  4. In a mixing bowl, combine remaining ingredients and mix well.
  5. Fill the pork pockets with your stuffing mixture.
  6. Cook the Chops to an internal temperature of 140
  7. Serve.
Note:
This recipe also makes a wonderful stuffing for pork loin!
