Cassie and Mark's Clam Linguine

Thanks to MM Local customers Cassie and Mark for this great take on Clam Linguine with MM Local tomatoes. The fresh tomato flavor really shines in this one - and the photos are pretty sharp too.

 

Serves: 4

Ingredients:

1 dozen fresh clams in shell
9 oz fresh linguini (or substitute dried)
1 jar MM Local tomatoes with Basil
1/2 teaspoon salt
Black pepper
3 large garlic cloves
2 baby bella mushrooms
1/4 cup fresh basil leaves cut into strips
1/4 cup olive oil
1/4 tablespoon butter
3 tablespoons red wine

How to Cook:

Preheat pan on medium high heat.
Add 1/4 teaspoon butter
1 clove chopped garlic and olive oil, and red wine
Steam clams in liquid until shells open
Remove clams (retain liquid in a separate container)
take clams out of shell and coarsely chop
Preheat large pan with rest of olive oil.
Add noodles to boiling water
Add mushrooms, salt, pepper, remaining garlic and 1/2 the basil.
Let cool
Add clam liquid slowly as mushrooms absorb it (about half the liquid)
Strain liquid from 1 jar Mm Local tomatoes, and coarsely chop.
Add noodles, tomatoes, clams to the pan and toss.
Let cool for 2 minutes, and add rest of basil, toss and serve with fresh parmesan cheese.
