Stout Buffalo Chili (warning: contains puns)

Not for the faint of heart, this is a spicy, delicious recipe for chiles that benefits from the freshness of MM Local tomatoes and gains depth from the vinegar notes added by our Front Range Pickled Chile Peppers. This recipe makes A LOT of good food. I’ve usually made mine in bulk in november when the last bell peppers come in. It then emerges from my freezer all winter as a welcome, warming treat.

MM Local Chile Hamburgers

These burgers are great, easy, and as spicy as you like 'em.

Serves 4

Ingredients

  • 1/2 jar MM Local High Desert Peppers (HOT or mild), drained and diced
  • 2 lbs ground beef (we used grassfed beef from Lasater Grasslands Beef
  • 3 cloves diced garlic (or, this time of year, 4 diced garlic scapes make a good local substitute)
  • Salt and Pepper to taste

Fire up the grill and remove beef from refrigerator - we like to make sure that meat has heated up to ambient temperature prior to grilling.

To make burgers, mix ground beef in a medium bowl with diced peppers, garlic, salt and pepper. Once thoroughly mixed, form into hamburger patties. Toss on the grill, cook to taste and enjoy. As always, be careful to clean all materials and hands that have touched raw meat!

Savory Pork (or Beef) Ragu

I love this braising dish for the way that a jar of our Front Range Tomatoes with Rosemary can add depth and flavor to an inexpensive cut of meat. This recipe takes a bit of time, so it's worth doubling and saving extras for leftovers or the freezer. Like so many slow-cooked dishes, this one just seems to get more delicious with a day of rest.
